When you have BJ????!!
Tonight for dinner, BJ decided to make Cafe Rio Barbacoa Pork Burritos (Enchilada style).
DROOL!!!
Those of you who have had the opportunity to experience the greatness, that is... Cafe Rio, know what I'm talking about!
We had been told how easy it is by some friends of ours, but didn't have a recipe, so he just did what he remembered our friends saying and made up the rest....
It tasted SO GOOD!
He did the spanish rice, the guacamole, black beans, everything....except the "green sauce".
That one will have to be conquered next time!
YUM!!!

i have a rio pork recipe if you want it. i like it better than actual cafe rio. :) i also have a rice recipe and dressing recipe. let me know :)

Oh that sounds SOOOOOO good. I did just receive a bunch of their recipes because I have been wanting to make Cafe Rio forever!!
